What Is Vegedeco Salad?
Vegedeco Salad is a lineup of salads that are shaped like cakes. A quick glance at the “salad”, and you’ll swear you were looking at a cake: there are decorative toppings, icing that looks like chocolate, and vegetables of all different colors.
The Vegedeco Salad has to be seen to be believed.
The Vegedeco Salad was designed by Mitsuki Moriyasu, a Japanese food designer who, according to a 2016 press release “aims to combine health and beauty” with her salads.
Vegedeco Salads are listed for sale online in Japan, and there’s also a Vegedeco Salad Café in Sakae, Nagoya, Japan.
Mitsuki created the Vegedeco Salad in 2015, when it appeared on the menu of her French restaurant in Nagoya.
The roots of the Vegedeco Salad go back to 2013, however, when Mitsuki created her original gluten-free and low-carb bread made with soy flour.
In late 2016, various US media outlets picked up the story of the Vegedeco Salad, calling it a “vegetable decoration cake” anyone can eat without feeling guilty.
ABC News and Fox News posted articles about the cake, saying things like,
“You would think Japanese eating is healthy enough . . . but now, the Japanese culinary scene is set to change with the addition of cake-looking salad hybrids that look like actual works of food art”
In response to the growing western media coverage, the Vegedeco Salad website has since been translated into English – although there’s only a limited amount of information available in English online.
And of course, orders are only available within Japan.
Vegedeco Salad Ingredients
Each Vegedeco Salad emphasizes low carbs and gluten-free ingredients. As you might expect, there’s an emphasis on traditional Japanese ingredients – including koji and tofu.
Beyond these two ingredients, the salads contain mostly natural ingredients “using the vegetables’ lovely color provided by Mother Earth”.
The classic Vegedeco Salad is 15cm wide and contains 440g of flavored vegetables, including carrots and cabbage. Like a normal sponge cake, there’s also a “sponge” layer – it’s made from soybean flour.
What about the icing? For icing, the Vegedeco Salad uses tofu cream blended with vegetables to create natural colors – including icing that you could swear was chocolate icing.
Finally, sweet rice malt is used as a substitute for sugar.
Since launching sales of Vegedeco Salads in June 2015, Mitsuki has created 40 different types of cakes.
Vegedeco Salad Pricing
In October 2016, four new frozen cakes were made available for sale and delivery across Japan. Each cake is 10cm wide and costs ¥2800 (about $25 USD).
You can also visit the Vegedeco Salad Café in person, where a slice costs ¥700 (about $6). At the café, you can also join one of Mitsuki’s cooking classes.
